DISH NAME

Ingredients:

  • Khoya (Mawa)
    250 Grams
  • Sugar Powder
    1/2 Cup
  • Almonds Finely Chopped
    7-8 Seeds
  • Fresh Coconut Grated
    2 Table Spoon
  • Green Cardamom Powder
    1/4 Tea Spoon

Method:

  • Take a non stick thick bottomed kadai add khoya to it & cook it in low flame.
  • Stirring continously till khoya starts to melt.
  • Remove from heat add sugar powder, grated coconut, chopped almonds & green cardamom powder.
  • Mix it well,keep aside to cool at room temperature.
  • Divide the mixture into equal portion & fill the mixture into modak mould it shape to modak & serve it.

Ingredients:

  • Rice Soaked
    1/2 Cup
  • Milk
    1.5 Litre
  • Green Cardamom Powder
    1/2 Tea Spoon
  • Sugar
    3/4 Cup
  • Saffron (Kesar)
    A Pinch
  • Almonds Blanched Peeled & sliced
    5-6 Pieces
  • Pistachios Blanched Peeled & Sliced
    8-9 Pieces

Method:

  • Drain the soaked rice & grind it into coarse paste, add little cold milk to the rice coarse paste.
  • Now Bring milk to boil.
  • Add rice paste to the boiled milk.
  • Cook till rice is completely cooked stirring constantly.
  • Add cardamom powder & saffron mix it well.
  • Add sugar & cook till it dissolved completely.
  • Remove from heat & garnish with almonds & pistachios.
  • Before serving chill it in refrigerator for an hour.

  • Khoya (Mava)Unsweetened Crumbled
    1 Cup
  • Sugar
    1/2 Cup
  • Milk
    2 Table Spoon
  • Green Cardamom Powder
    1 Tea Spoon
  • Cocoa Powder
    2 Table Spoon
  • Cashew Nuts For Garnishing
    10- 12 Pieces

Method:

  • Take a pan add crumbled khoya & heat it for 1-2 minutes, stir it.
  • Add sugar & milk to it and stirring continuously.
  • When the sugar is completely dissolve than add green cardamom powder & mix it well.
  • Keep stirring continuously over the medium heat cook till the mixture get thicken or leaves the side of the pan.
  • Now add cocoa powder & mix it evenly.
  • Remove from the heat & keep aside for cooling the mixture.
  • When the mixture is enough warm to touch then knead a smooth dough.
  • Grease your hand with little ghee if it required.
  • Now divide the mixture into equal lemon sized small ball.
  • Then press it slightly in the center & put cashew nuts to it.

Ingredients:

  • Amla (Gooseberry)
    250 Grams
  • Sugar
    1 Cup
  • Green Cardamom Powder
    1/2 Tea Spoon
  • Ghee
    1/2 Tea Spoon For Greasing

Method:

  • Take amla in a pressure cooker steam it for 3-5 minutes & allow it to get cool.
  • After cooling amla, grate it & keep aside.
  • Heat a pan add sugar & amla to it stirring continous on medium flame.
  • Cook till the mixture get thick in consistency.
  • When the sugar syrup is absorbed by the amla then remove from heat.
  • Now add cardamom powder & mix it.
  • When the mixture is slightly cool, transfer the mixture into bowl.
  • Now grease your hand with ghee & take little amount of amla mixture in your hand & make small ball shaped ladoos.
  • Place it in a plate, when all the aml ladoos are ready then keep it in a airtight container.

Khaja

Khaja

Ingredients:

  • Maida (Refined Flour)
    500 Grams
  • Ghee
    3/4 Cup
  • Cardamom Powder(Green Elachi Powder)
    1 Tea Spoon
  • Oil
    For Deep Frying
  • Sugar
    1.5 Cups

Method:

  • Take a refined flour add ghee to it & mix it evenly.
  • Knead a soft dough & keep it aside by covering the dough with soft cloth.
  • Now heat together sugar with approx 2 cups of water & cardamom powder & stir it ocassionally.
  • Cook the sugar syrup till the consistency reaches to less than 1 string.
  • Remove the sugar syrup from heat.
  • Take a part of dough & roll it into roti.
  • Spread little ghee over the roll roti & sprinkle some dry flour.
  • Now make a roll of the roti & cut into 1 inch pieces.
  • Roll out each piece to make elongated khaja.
  • Heat enough oil in a kadai.
  • Drop the khajas one by one into kadai.
  • Deep fry the khajas into medium heat.
  • Fry till golden brown.
  • Drain it on absorbent paper & then dip one by one khaja into sugar syrup dip it for 1 minutes or till well coated syrup.
  • Set it into serving plate & serve it.
  • After cooling it can be stored in airtight container for 6-7 days.

  • Refined flour (Maida)
    2 Cups
  • Sugar
    3/4 cup
  • Milk Powder
    1/2 Cup
  • Butter/ cream
    1 Cup
  • Vanilla essence
    1 Tea Spoon
  • Baking powder
    1 Table Spoon
  • Milk
    1/2 Cup

Method:

  • Preheat oven at 180oc.
  • Take a large bowl add sugar, milk powder, butter beat together till creamy.
  • Sieve maida, baking powder add this to milk powder mixture slowly add milk and vanilla essence, nuts.
  • Pour a cake mixture in a greased baking tin.
  • Put it in a preheated oven for 30 minutes at 150oc.
  • Remove and serve it.

  • Refined Flour
    1 Cup
  • Sugar
    1 Cup
  • Beetroot Puree
    1 Cup
  • Cocoa Powder
    3 Tea Spoon
  • Lemon Juice
    1 Table Spoon
  • Yogurt
    1/2 Cup
  • Vanilla Essence
    1 Table Spoon
  • Baking Powder
    1.5 Table Spoon
  • Icing Sugar
    For Dusting
  • Oil
    2-3 Cups

Method:

  • Preheat the oven at 1800c.
  • Take a large bowl & sieve refined flour, cocoa powder & baking powder, mix it.
  • Now take a other bowl add beetroot puree, sugar, lemon juice & vanilla essence, mix it properly.
  • Transfer the refined flour mixture to beetroot bowl.
  • Now add yogurt whisk it with blender then add oil & make a smooth mixture.
  • Greased the baking dish & add this mixture to it.
  • Bake it for 30 minutes or cake is done.
  • Cool & demould the cake.
  • Dust with icing sugar & serve it.

    5-6 Medium Boiled, Peeled & Grated
  • Green Cardamom Powder
    1/4 Tea Spoon
  • Mawa/Khoya
    1/2 Cup
  • Ghee
    2 Table Spoons
  • Almond
    3-4 Seeds Chopped
  • Raisins
    6 Pieces
  • Melon Seeds (Magaz)
    2 Table Spoons Dried
  • Sugar
    3 Table Spoons

Method:

  • Heat ghee in a pan.
  • Add magaz & Chukandar saute for 5 minutes.
  • Add cardamom powder, almonds, raisins and mix it gently.
  • Now add mawa & saute for 3-4 minutes then add sugar. Now cook it till sugar dissolved properly.
  • Chukandar halwa is ready to serve. Enjoy !!

    2 Medium

Method:

  • Boil the milk at low heat till get lightly thicken.
  • Add carrots to it & cook for 15-20 minutes at low heat.
  • Wait till carrots are completely cooked.
  • Add sugar & stir it continously till sugar get dissolved.
  • Add cardamom powder mix it well.
  • Kheer is ready serve hot or cold.
