Lauki Kheer

Ingredients:

  • Ghiya,Lauki (Bottle Gourd)
    500 Grams
  • Milk
    1 Litre
  • Ghee
    2 Table Spoon
  • Green Cardamom Powder
    1/2 Tea Spoon
  • Almond Chopped & roasted
    1 Table Spoon
  • Cashew Nuts roasted
    6-8
  • Sugar
    1/2 Cup

Method:

  • Take lauki peel cut into half to remove the seeds then wash & grate.
  • Now boil the grated lauki till soft then strain it & squeeze excess water.
  • Heat ghee in a kadhai add grated lauki to it cook for 10 to 15 minutes then keep aside.
  • In other pan boil milk now add cooked lauki to it.
  • Add sugar & cooked till it dissolve now add green cardamom powder & roasted nuts.
  • Remove from heat & serve hot or cold.

Ingredients:

  • Almonds Soaked in a milk
    30-40 Seeds
  • Sugar
    4 Table Spoon
  • Milk
    1/2 Litre
  • Green Cardamon Powder
    1/2 Tea Spoon
  • Almond Essence (Optional)
    3-4 Drops
  • Soaked saffron thread (In a Milk)
    5-6 Threads

Method:

  • Heat Milk in a thick bottom pan.
  • Grind the soaked almonds to make smooth paste.
  • Milk comes to boil add sugar, green cardamon powder.
  • Now add almond paste & cook it in a low flame.
  • Stirring continously for 5 minutes or the mixture starts to thicken.
  • Add soaked saffron thread cook it for 2-3 minutes.
  • Remove from heat add almond essence.
  • Transfer the kheer into serving bowl garnishing with almonds slices.
  • Serve it.
