Chukandar Chutney

Ingredients:

  • Chukandar(Beetroot) Grated
    1 Large
  • Fresh Coconut Grated
    1/2 Cup
  • Carrot Grated
    1 medium
  • Tomatoes Chopped
    2 Medium
  • Garlic Crushed
    3-4 Cloves
  • Green Chillies Chopped
    2-3 Pieces
  • Cumin Seeds
    1/2 Tea Spoon
  • Oil
    1 Tea Spoon
  • Salt
    To Taste
  • For Tempering:
  • Oil
    1/2 Tea Spoon
  • Fresh Curry Leaves
    7-8 Leaves
  • Dry Red Chilli Broken
    2 Pieces
  • Mustard Seeds
    1 Tea Spoon

Method:

  • Heat oil in a pan add cumin seeds saute until it crackled.
  • Add garlic & green chillies saute for 1/2 minutes.
  • Now add grated chukandar, carrot & tomatoes cook for 4-5 minutes.
  • Then add coconut & salt mix properly.
  • Remove from heat, keep aside for cooling.
  • Once the mixture get cooled then transfer the mixture into blend it in mixer to a smooth paste.
  • If needed then add 2 table spoon of water for smooth paste.
  • Take a bowl & transfer the chutney into it.
  • Heat oil in a small pan & add mustard seeds, broken dried red chilli & fresh curry leaves.
  • Serve it or keep it in refrigerator for 5-6 days.

Ingredients:

  • Coconut Grated
    1 Cup
  • Chana Dal Roasted
    1 Table Spoon
  • Green Chilli
    1 Piece
  • Ginger Finely Chopped
    1 Inch
  • Yogurt
    3 Table Spoon
  • Salt
    To Taste
  • For Tempering (Tadka)
  • Mustard Seeds
    1/2 Tea Spoon
  • Dried Red Chillies Broken
    2 Pieces
  • Curry Leaves(Kadi Patta)
    5-6 Leaves
  • Oil
    1 Tea Spoon

Method:

  • Take a mixer jar.
  • Add grated coconut, roasted chana dal, green chilli, ginger, salt & yogurt into mixer jar.
  • Grind it to make a fine paste of it.
  • Now transfer the paste in a small bowl & keep it aside.
  • For Tempering (Tadka), take a pan and heat the oil in it.
  • Add mustard seeds, curry leaves & dried red chillies. Wait till it crackle.
  • Now pour this tempering (Tadka) over the chutney paste you prepared & mix it properly with the use of a spoon.
  • Your yummy Chutney is ready to serve.

  • White Sesame Seeds (Til)
    1 Cup Dry Roasted Lightly
  • Tamarind Pulp
    1 Cup
  • Green Chillies
    4 Pieces
  • Fresh Coriander
    1 Bunch
  • Garlic
    6-7 Cloves Peeled
  • Salt
    To Taste

Method:

  • Take 1 tea spoon of sesame seed separately & now put all sesame seed in a jar for grinding.
  • Keep aside.
  • Now grind all garlic, green coriander, green chillies salt to smooth thick paste.
  • Take a bowl add the chutney & sesame seeds powder and tamarind pulp mix gently.
  • Sprinkle that 1 tea spoon of sesame seeds over chutney and serve it.

  • Red Tomato
    6-7 Finely Chopped
  • Onion
    1 Large
  • Cumin Seeds
    1/2 Tea Spoon
  • Mustard Seeds
    1/2 Tea Spoon
  • Curry Leaves
    6-7 Leaves
  • Turmeric Powder
    1/4 Tea Spoon
  • Coriander Powder
    1 Tea Spoon
  • Red Chilli Powder
    1/2 Tea Spoon
  • Oil
    2 Table Spoon
  • Green Chilli
    1 Piece
  • Fresh Coriander leaves
    2 Table Spoon
  • Salt
    To Taste

Method:

  • Heat the oil in a pan.
  • Add the cumin seeds & when it color changes then add curry leaves, mustard seeds & green chilli to it.
  • Saute for a minutes.
  • Add onion & cook till the color changes to golden brown.
  • Add the tomatoes & turmeric powder, chilli powder, coriander powder.
  • Saute for 3 minutes.
  • Add salt & half cup of water & mix gently, cook it on a low flame.
  • The mixture comes to boil & cook it for 10 to 15 minutes.
  • Garnish with fresh coriander & serve it.

Tamarind and Date Chutney

Ingredients:

  • Dates (Khajur) Roughly Chopped
    20-25 Pieces
  • Tamarind pulp
    1 Cup
  • Cumin Seeds
    2 Tea Spoon
  • Fennel Seeds
    1/4 Tea Spoon
  • Whole Red Chilli
    2 Crushed
  • Jaggery (Gur)
    1/2 Cup Grated
  • Black Salt
    1 Tea Spoon
  • Dried Ginger Powder
    1/2 Tea Spoon
  • Salt
    To Taste

Method:

  • Dry roast the cumin seeds and fennel seeds on medium heat.
  • Keep aside for cool.
  • Grind together to a powder.
  • Take 4 cups of water in a pan .
  • Add dates, jaggery, tamarind pulp, cumin & fennel powder, crushed red chilli, dried ginger powder black salt, salt to taste.
  • Cook it on medium heat till it boils.
  • Lower the heat & stir continously till it get lightly thicken.
  • Cook for 5-8 minutes.
  • Chutney is ready cool & serve it.

  • Tomato
    6-7 Finely Chopped
  • Dates (Khajur) Seedless
    5 Roughly Chopped
  • Bay Leaves (Tej Patta)

  • Cumin Seeds
    1/2 Tea Spoon
  • Cloves (Laung)
    2-3 Pieces
  • Green Cardamom Powder
    1/4 Tea Spoon
  • Black Pepper Seeds
    3-4 Pieces
  • Raisins(Kismish)
    6-8 Pieces
  • Cashew Nuts
    6-7 Pieces
  • Sugar
    2 Table Spoon
  • Ghee
    2 Table Spoon

Method:

  • Heat the ghee in a pan.
  • Add bay leaves, cumin seed wait till color change.
  • Add cloves, black pepper seeds saute for a minute.
  • Then add dates,raisins, cahewnuts to it cook for while & add tomatoes.
  • Now put sugar to it stir it gently so that sugar get dissolved well.
  • Add half cup of water.
  • Cook till it takes the consistency of chutney.
  • Cool and serve it.
  • Note: You can store it in refrigerator for 1 or 2 days.

Method:

  • In a blender blend peanuts,garlic, green chilli, & coriander make a smooth paste adding a yogurt.
  • Add salt to it & serve it.
