Baingan Corn Bharta

Ingredients:

  • Brinjal (Baingan)
    1 Large
  • Corn Boiled
    1 Cup
  • Tomatoes Chopped
    1 Medium
  • Onions Chopped
    1 Large
  • Garlic Chopped
    8-10 Cloves
  • Ginger Chopped
    1 Inch Piece
  • Fresh Coriander Leaves
    1 Table Spoon
  • Green Chillies Finely Chopped
    2 Piece
  • Onion Seeds (Kalonji, Karel)
    1/2 Tea Spoon
  • Cumin Seeds
    1 Tea Spoon
  • Red Chilli Powder
    1 Tea Spoon
  • Coriander Powder
    1 Table Spoon
  • Dry Mango Powder (Amchoor)
    3 Tea Spoon
  • Oil
    3 Table Spoon
  • Salt
    To Taste

Method:

  • Take a baingan wash it properly & dry it well.
  • Roast the baingan over high heat till the skin seems to be peeling off.
  • Keep aside for cooling, when it is fully cooled then take out the skin of baingan & mash it properly.
  • Take a kadai heat oil in it.
  • Add cumin seeds & onion seeds fry for 1/2 minutes at medium heat.
  • Add onion fry till golden then add garlic & ginger saute for a minute.
  • Add tomato & green chillies & cook for 3-4 minutes.
  • Add coriander powder, red chilli powder, turmeric powder & salt, cook it for 2-3 minutes.
  • Add corn & mashed baingan & half cup of water, mix it well & cook for 3-4 minutes
  • Add coriander leaves & dry mango powder mix it properly & remove from heat.
  • Corn Baingan Bharta is ready to serve.

    6-7 Cloves
  • Ginger Chopped
    1 Inch Piece
  • Fresh Coriander Leaves
    1 Table Spoon
  • Green Chillies Finely Chopped
    2 Piece
  • Asafoetida (Hing)
    A pinch
  • Cumin Seeds
    A Pinch
  • Red Chilli Powder
    1 Tea Spoon
  • Coriander Powder
    1 Table Spoon
  • Oil
    3 Table Spoon
  • Salt
    To Taste

Method:

  • Take a Baingan, wash & dry it.
  • Grease the Baingan by oil and then roast it in the medium heat till it completely cooked.
  • keep it aside for cooling.
  • When it gets cooled then remove its skin clearly & mash it well.
  • Take a pan and heat oil in it as per your requirement.
  • Now add cumin seeds and fry it till crackled. Now add garlic, ginger and green chillies. Saute it for 1/2 minutes.
  • Add onion to it & saute till color change to golden..
  • Add tomatoes, coriander powder, red chilli powder, turmeric powder, asafoetida & salt.
  • Saute till oil leaves the surface.
  • Now add mashed brinjal stir it properly with the help of large spoon.
  • Cook for 4-5 minutes at low heat.
  • Add fresh coriander leaves, mix it well & remove from heat.
  • Serve it with chapati or parantha.
